Coconut Carob Pudding

Carob: Hippie powder or chocolate's lame sister? If you're doing an elimination diet like I am, you might want to check out this powder ground from Mediterranean tree pods. It lends a sweet, roasty flavor and is naturally caffeine-free. 


  • 1 14.5 oz. can of full-fat coconut milk
  • 1 ½ - 1 ¾ c. water (Start w/ 1 ½ c. and use remainder as necessary.)
  • ½ c. carob powder
  • 4 tbsp. maple syrup
  • 6 tbsp. chia seeds
  • 1 tsp cinnamon 
  • 1 pinch sea salt
  • Shredded coconut, toasted (optional)

Add all ingredients to a high-speed blender and pulse to combine. Use a spatula to scrape down sides. Blend again until smooth. Pour into 6 small serving dishes or a large bowl. Chill in fridge for at least 2 hours. Top with toasted coconut. Eat. Enjoy.
